Growing Vegetables in Limited Space

Now is a good time to start planting a vegetable garden. I know there are some people who don’t have a lot of space to grow vegetables in the yard but don’t let that stop you from growing a few edible plants. Some plants like carrot, arugula, spinach, lettuce, and onions don’t take up a lot of space and can be grown in containers on the porch or balcony. If you have a railing of some kind consider planting sugar snap peas that climb by tendrils and can be eaten, pod and all.

Potatoes can be grown in a deep container, by covering the seed potatoes with about 6 inches of potting soil. The potato is actually a storage stem and the new potatoes will be produced on the stem in the top six inches between the old potato and the green leaves.

If you want to try something different, plant a few pansy plants. Harvest the flowers when they are fully open and use them to garnish salads. These flowers are edible. Be sure, as with any produce, to wash them in cold water before eating them.
